Shrimp Pie

I got this recipe from my mother.  A close friend had some cooked shrimp he wanted me to do something with.  He rejected my immediate thoughts, so I called mom and we played a game of "stump the chef".  She came through admirably.  As predicted, everyone wanted the recipe.  So here it is!

1 Lb. cooked large shrimp
1 small bunch fresh basol
2 TBS garlic
2 pie crusts
3 ripe tomatoes
1 thinly sliced sweet onion (Walla Walla or Vidalia)
6 oz. shredded mozarella
2 TBS. grated parmesian
cayenne to taste

Slice the tomatoes about 1/4 inch thick and lay on paper towels to soak up the juice for 5minutes.
Put together the two pies by layering basil, tomatoes, garlic, shrimp, cayenne and mozarella.  Do that again.  Top with sliced onions and parmesian.  Bake at 350 F until the cheese is melted.
